I love food. Period. There are so many incredible cooks out there and some of them are my family and friends. Recently I attended the Polish Heritage Festival in Ashton NE. It’s a Sunday at the St. Francis Reception Hall filled with some of the best Polish food you can imagine. Pierogies filled with either sour kraut and mushrooms or potatoes and cheese, Polish sausages, meatballs and gravy and so many lovely side dishes. Let’s not forget the soups!!! Of course, the number one favorite is Czernina.
A symbolic Polish soup, the traditional czernina is made with duck blood. If you want to taste something different yet steeped in tradition, try this popular Polish duck blood soup!
Sometimes jokingly referred to as a chocolate soup because of its brownish color, the Polish duck blood soup is a dish from the Central and Northern parts of Poland. You won’t find it cooked in the Southern part of Poland so much.
I tried it once. Not to my liking, but I appreciate the love my friends have for it. We also had this delicious sauerkraut and sausage soup. I could not eat this fast enough! So good, you’d slap your grandma. All homemade with love. The crowd at this year’s event was filled with people I have known for years. Plus, the Urkoski’s Polka Band was playing, and yes, the dance floor was a hopping! I was in my happy place.
Now, I see this new or perhaps it’s old photo of a Pierogi “taco” with sauerkraut and Polish sausage. Mind blown. I need to try this. If you know how I could make this, let me know. In the meantime, keep trying the recipes in the new cookbook. It’s printed and I will be giving them away… Some will win an oven mit, too.
